Black Bean Soup
Ingredients:
- One 14.5 oz can Black Beans, with liquid
- 2/3 cup Chicken Broth
- 2/3 cup your favorite Salsa (we use a Peach Pineapple Chipotle Salsa)
- 2 teaspoons Chili Powder
- 2 tablespoons Ketchup
- 1 pkg Real Bacon bits
- Optional: shredded cheese topping
- In a blender, combine half of the beans and all their liquid, the chicken broth, and 1/3 cup of the salsa. Puree the mixture until smooth.
- Pour the contents of the blender into a medium saucepan and place it over high heat. Add the remaining beans, remaining salsa, chili powder, ketchup, and bacon bits. Bring the soup to a boil. Then reduce the heat to low.
- Cook the soup, stirring frequently, until thickened, about 9 minutes.
- Ladle the soup into bowls. Top with shredded cheese if you would like.
- Enjoy!

Please Note: We double this for a family of four (two of those small kids) and for leftovers. We like to pour the soup over Frito's; however, that does add to the calorie count ... if you're keeping track!
