Sharing a Recipe: Black Bean Soup

We LOVE this healthy and very yummy soup. It comes from Now Eat This by Rocco Dispirito. The cookbook is 150 of America's favorite comfort foods all under 350 calories. We've tried quite a few of the recipes in this book, but this one is our favorite by far. And it's SO easy to make!

Black Bean Soup

Ingredients:
  • One 14.5 oz can Black Beans, with liquid
  • 2/3 cup Chicken Broth
  • 2/3 cup your favorite Salsa (we use a Peach Pineapple Chipotle Salsa)
  • 2 teaspoons Chili Powder
  • 2 tablespoons Ketchup
  • 1 pkg Real Bacon bits
  • Optional: shredded cheese topping
Preparation:
  • In a blender, combine half of the beans and all their liquid, the chicken broth, and 1/3 cup of the salsa. Puree the mixture until smooth.
  • Pour the contents of the blender into a medium saucepan and place it over high heat. Add the remaining beans, remaining salsa, chili powder, ketchup, and bacon bits. Bring the soup to a boil. Then reduce the heat to low.
  • Cook the soup, stirring frequently, until thickened, about 9 minutes.
  • Ladle the soup into bowls. Top with shredded cheese if you would like.
  • Enjoy!

Please Note: We double this for a family of four (two of those small kids) and for leftovers. We like to pour the soup over Frito's; however, that does add to the calorie count ... if you're keeping track!
